Spring CSA Week 10 | Thanks for a great spring!

Week 10: June 12 - June 15


“It was the best of times, it was the worst of times, it was the age of wisdom, it was the age of foolishness, it was the epoch of belief, it was the epoch of incredulity, it was the season of Light, it was the season of Darkness…” Was Charles Dickens writing about springtime in Minnesota?!


What a wild ride the last ten weeks have been. From 90 degrees on Mother’s Day to 48 overnight on Monday, it has been a true rollercoaster of a spring. In just a couple months we’ve weathered persistent drought and multi-inch deluges. We’ve urged some crops to slow down while pushing others to speed up. Some veggies have surprised us with their abundance, while others have left us wanting more. We’ll say this: there haven’t been many dull moments.


Thankfully, it has felt much more like the best of times than the worst of times. We hope you feel the same way! The crops have grown well and we haven’t seen as much disease pressure as last year’s hot and wet spring. The snap peas are bountiful, the carrots have come in just in time for the last CSA bag of spring, and we even have a handful of extremely early cucumbers to share with full share members. We made it through the season of darkness into the season of light, and the veggies have stayed delicious all the while.


We hope you’ve enjoyed eating through the spring season alongside the farm. We love pushing the bounds of what can be grown in Minnesota at this time of year, and are constantly on the lookout for ways to get more variety and diversity into our CSA bags. Spring is a time of freshness - of salad greens and radishes and things just starting to grow - a season of patience and potential. Having the support of CSA members like you early in the year makes our spring that much richer. We love feeding our community all year round, and we’re thankful for the support you give us.


The majority of you will continue on with the Summer CSA, in which case, we’ll see you right back here next week! Others will go off to vacations and cabins and home gardens, in which case we hope to see you on the farm once in a while - and back here in the fall or winter or next spring! We are incredibly grateful for each and every one of you. Your support makes this farm possible!

In Your Bag This Week

Sugar Snap Peas: So tasty we can't keep them around for long. Easily added to anything for crunch and a bit of sweetness. Store in a bag in your fridge, if they make it that far.


Carrots: The first carrots of spring! These carrots are sweet, crunchy, and oh so addicting! Store in your fridge.


Romaine Lettuce: Beautiful crisp lettuce heads & hearts. Great for everything from lettuce wraps to salads and sandwiches. Store in a bag in your fridge.


Scallions: The white and green parts of these beautiful green onions are both edible - use the white like an onion, chop the greens as a garnish or hit of flavor in your dishes! Store in a bag in your fridge.


Flavor Mix microgreens: Mild and tasty, these make an easy salad on their own or can add some color to any other salad. Try them on eggs or sandwiches – or anything, really! Store in a bag in your fridge.


Green Garlic: This young garlic is fresh and delicious. Chop it up and use it just like a full garlic bulb. Store in a bag in your fridge.


Pea Shoots (half shares): Sweet and crisp, these make a great addition to sandwiches, wraps, salads or can be lightly sautéed as a side dish. Store in a bag in your fridge.


Cilantro microgreens (full shares): Zippy micros to add a little flavor to whatever's on your plate! Store in your fridge.


Cucumber (full shares): Our earliest cucumbers ever! Crunchy and refreshing, chop up for a salad, add to sandwiches or just eat raw! Store in a bag in your fridge.


Radishes (full shares): These beautiful radishes have a mild heat and a great crunch. Add to salads or sandwiches for a little extra flavor. Store in a bag in your fridge.


Farm Mix Salad Mix (full shares): A mix of red and green lettuce that’s delicious with just olive oil and salt, or dress it up! Store in a bag in your fridge.


What should I make with what’s in the bag?


Speaking of the ‘age of foolishness,’ it really feels like a fool’s errand to recommend any recipes with peas and carrots, since I would bet 95% of us will happily snack on them raw. But if you’re not a raw carrot fan, maybe try these roasted carrots with whipped tahini, which sounds exquisite? Or a flourless carrot cake?


With head lettuce, green garlic, cilantro, and scallions in the bag, we’ve got a great base for some lettuce wraps - like these Thai larb lettuce cups or these Korean beef lettuce wraps. Or chop that head lettuce up and mix with flavor mix microgreens for a salad that is visually, texturally, and flavor-ly (?) exciting.
