Summer CSA | Week 2

On the farm this week: This week on the farm we have been weeding like crazy. It does not matter how good a farmer or gardener you are, weeding is always a constant task on the farm. We are starting to see some good fruit set on our tomato plants and are getting excited for summer crops to come on strong.


This week you will see our 'CSA only table' near the cooler. please grab your basil from it before you leave :)

 

In Your Bag This Week


Red butterhead Lettuce: These lovely heirlooms make a great base for any salad or add a bit of texture or crunch to a sandwich. Store in a bag in your fridge.


Bok Choi: very versatile! Great in sauté's and on the grill but also great baked into casseroles or meat loaf. Store in a bag in your fridge.


Green Onion: easiest food to add to any dish to dress it up! the whole plant is edible, just cut off the roots and chop the rest. Store in a bag in your fridge.


Snap Peas: Not sure I really need to give you any advice on what to do with these besides hide them from your kids lol. Easily added to anything for crunch and a bit of sweetness. Store in a bag in your fridge.


Flavor Mix Micros: mild and tasty, these make an easy salad on their own or can add some color to any other salad. Store in your fridge.


Carrots: Spring carrots are sweet, crunchy and oh so addicting! Store in a bag in your fridge.


Basil: Add this beautiful herb to pasta, salad, cocktails or pretty much anything for an herbaceous punch of flavor. Store on your counter in water like flowers.


Farm Mix salad mix: Great all around salad mix, you can eat with just olive oil and salt or dress it up with any toppings you want. Store in a bag in your fridge.


Kale: strip the leaves from the stem and chop for a salad or to add to any cooked dish. store in a bag in your fridge.


full shares also received Nasturtium leaves: spicy like wasabi and beautiful to look at. Add to tacos, salads or over main dishes. Store in a bag in your fridge.


 


Disappearing Bok Choi Salad| Serves: 4 | total time: 10 mins

Ingredients

1 tablespoon olive oil

1/3 cup white wine vinegar

1 tablespoon honey

4 tablespoons soy sauce

2 bunches baby bok choy, cleaned and sliced

1 bunch green onions, chopped

1/8 cup almonds, chopped

1/8 cup cashews, chopped


Instructions

  1. Whisk together olive oil, white wine vinegar, honey and soy sauce.

  2. Combine the baby bok choy, green onions, almonds and cashews. Toss with the dressing and serve immediately.

 

Simple Butter Lettuce Salad | Serves: 6 | Total Time: 10 mins


Ingredients

  • 2 heads butter lettuce, roughly chopped

  • 1 cup castelvetrano olives, pitted, cut in half

  • 1/2 cup panko

  • 2 tbsp butter (or olive oil)

  • 1/4 cup chives, minced

  • 2 oz manchego cheese, grated

  • freshly ground pepper

Apple Cider Vinaigrette

  • 1/4 cup apple cider vinegar (unfiltered)

  • 2 tbsp honey

  • 2 tbsp olive oil

Instructions

  1. In small bowl whisk together ingredients for the dressing, set aside.

  2. In a small skillet set over medium heat, melt butter and add panko. Stir often until panko is golden brown in color.

  3. Arrange butter lettuce on a large platter, shave manchego over lettuce and add olives, pepper, panko and chives. Drizzle with dressing right before serving and enjoy!

** If you dress this salad too soon, the panko will get soggy. We recommend saving the panko until after it is dressed and sprinkle it on right before serving.


 

We wash everything in your bag but we wash them in bulk so some things may need an extra rinse at home. Please bring your bag back next week so we can re-use them! thanks!
