What are Micro greens:
Micro greens are the shoots of any vegetable plant cut just after the first leaves have developed. They come in great variety, add color, flavor, and a little charm to any dish, and are highly nutritious. Researchers found microgreens like red cabbage, cilantro, and radish contain up to 40 times higher levels of vital nutrients than their mature counterparts.
“The microgreens were four- to 40-fold more concentrated with nutrients than their mature counterparts,” says researcher Qin Wang, PhD, assistant professor at the University of Maryland in College Park. “When we first got the results we had to rush to double and triple check them.”
For example, red cabbage microgreens had 40 times more vitamin E and six times more vitamin C than mature red cabbage. Cilantro microgreens had three times more beta-carotene than mature cilantro. (cite: web md 2012 study)
At 10th St. Farm & Market, we grow our micro greens under natural sunlight in our green house in NOP (national organic program) approved soil. We grow them with care using organic seed, harvest, wash and pack them by hand and deliver them within one day to your local Co-ops and restaurants. This ensures a clean, crisp and tasty product that lasts at least 10 days from harvest. Microgreens are not like sprouts as they are grown in sunlight and past full germination so they do not harbor the same bacterial risks.
